What is DMTS?

DMTS is a volatile sulfur compound (VSC) that gives off a "rotten cabbage" or overcooked vegetable aroma.

It has an extremely low flavor threshold, so even trace amounts can ruin a beer's flavor.

Why is DMTS a Problem in Brewing?

It can form naturally during hop processing or be introduced during cold-side additions like dry hopping.

Many hop extracts created with CO2 extraction, steam distillation, or other high-heat methods concentrate DMTS rather than eliminate it.

Once beer is cooled post-fermentation, there is no natural mechanism to remove or volatilize DMTS, so it lingers.
