What Makes a Great Summer Beer?

Whether you’re brewing a tart shandy, a fruity hefeweizen, or putting a seasonal twist on your best-seller, read on to learn what makes a GREAT summer beer!

There’s simply nothing like cracking open a cold beer on a hot summer day. Ok, maybe it’s a tie between that and savoring a crisp draft on the patio of your local brewpub. The point is that summer has unofficially started, and we know we’re not the only ones craving a refreshing summer beer.

Last summer, president and CEO of the Beer Institute Brian Crawford told Craft Brewing Business, “Beer is more than just a beverage — it’s woven into the fabric of our culture and brings Americans together. With 40% of beer sales happening between Memorial Day and Labor Day, we know beer is bringing family and friends together throughout the summer to enjoy beer responsibly.”¹

For microbreweries, the uptick in consumption provides more opportunities than simply higher sales. Read on and discover the key features brewers should consider when creating their next great summer beer!

Microbreweries and Limited-Edition Seasonal Beers

Breweries of all sizes can benefit from offering seasonal beers. For microbreweries, however, summer beers are a pivotal opportunity to increase consumer engagement, differentiate their brand, and boost sales during peak consumption season.

Even breweries with extensive community ties and consistent patrons know that consumer demand is fickle. Demand for a consistently high-performing beer can suddenly dry up, leaving breweries scrambling. Add in the demand for limited-edition beers during the summer months, and any brewery would experience consumer demand whiplash.

Mintel says that despite consumers often having established beer favorites, growing demographics like to discover new and unique flavor combinations. Specifically, “33% of 22-34 year old beer consumers in the US say they like to buy seasonal and limited-edition offerings.”² 

Unlike macrobreweries, however, microbreweries are able to pivot quickly to meet consumer demand for limited-edition summer flavors. This kind of flexibility is incredibly valuable and helps them build hype while standing out from competitors.

So… what makes a successful summer beer?

3 Most Important Features of a Successful Summer Beer

If some of the demand for summer beer comes from “novelty” or “innovation,” then it’s important to remember that the next IT beer might be something no one has ever thought of. Between shifting consumer preferences and advancements in beverage flavoring technology, the summer beer possibilities are constantly expanding. There are, however, three key features that tend to define popular summer beers.

DRINKABILITY

The combination of warmer temperatures and the increased number of social gatherings make summer an optimal season for enjoying beer. From the local brewpub patio to various outdoor occasions like grilling and tailgating, there are numerous occasions for enjoying a beer, and lighter beers tend to be easier to drink during all this socializing.

Don’t get us wrong, a double-hopped IPA jam-packed with big hop flavor can still be successful. However, heavier beers can be difficult to drink throughout an all-day or early-afternoon event. That’s why crisp, refreshing beers are ideal. 

These don’t necessarily have to be low-calorie or low-ABV (more on that later!), but they need to have maximum drinkability so consumers can enjoy them all-day. Some styles lend themselves to all-day drinkability more than others (light lagers, pilsners, lighter wheat beers, shandies, hefeweizens, etc.), but the right brewer can create a phenomenal summer beer in ANY style.

FLAVOR

Regardless of whether people are actually taking vacations to far-off lands, consumers are craving adventure and excitement. When it comes to beverages, an interest in travel and experimentation has them seeking out fresh new options (blending sweet & salty, sweet & spicy, etc.) or wanting to experience history through regional flavors.

For brewers, this is an opportunity to highlight regional or exotic flavors, create unique hop combinations, and experiment with their latest ideas! Fruit beers, in particular, are becoming more and more popular. For example, Mintel observed that there were more mango-flavored raw product launches in 2024 than there were in the past decade, and fruit flavors like Clementine and Strawberry have high growth momentum. ³

This is also a great opportunity to experiment with hop flavors and aromas with bright, fruity qualities. Azacca®, for example, has notes of ripe mango and citrus while El Dorado® has luscious stone fruit qualities. It’s all about creating that limited-edition flavor experience that conveys all things summer.

HYPE

If something is seasonal and/or limited-edition, then it needs to be exciting! Consumers need to get one look or taste and know it’s something special they should enjoy as much as possible since it won’t be around for long. It’s about finding out what your customers enjoy and tapping into that desire with a sense of urgency. 

This can be accomplished through nostalgic flavors like ripe summer watermelon, and other times it’s all about creating a sense of novelty. Unexpected fruit fusions paired with complementary or contrasting hop aromas can create this kind of hype, or brewers can lean into entirely new realms of flavor and aroma with TTB-approved cannabis flavorings (no THC included).

Not only do the flavor profiles of cultivars like Grapefruit Kush, Sour Tangie, or Pineapple Express pair beautifully with hops, but they have bright fruity qualities that lend themselves perfectly to summer beers. 

Can A Great Summer Beer Be a Non Alcoholic Beer?

Yes, yes, and YES! Consumer wellness trends have impacted nearly every facet of the beverage industry, and beer is no different. Between “sober curious” consumers and “mindful drinking” behaviors, demand for low-ABV and non alcoholic beer is UP. Plus, breweries benefit in several ways from offering non alcoholic summer beer options.

First, having options for the growing number of consumers choosing to reduce or eliminate alcohol consumption is a no-brainer, and not just during the summer. This lets current consumers with changing habits easily switch to NA offerings instead of simply disappearing. 

Second, NA beers can appeal to consumers who might not be of drinking age or who have no interest in alcohol whatsoever. So, having an exciting limited-edition NA beer can help get them in the door when they might never have done so otherwise.

Third, when it comes to your taproom, NA beers (and hop waters) make it easier for patrons to hang around longer. Beer is often seen as a late afternoon or evening beverage, but NA beverages can easily be consumed at any time of day. Even patrons who specifically show up for beer can pace themselves or end the night with an NA beer. Not only does this promote responsible consumption, but it also increases your average ticket size.
